Chef Chris
Chris is our executive chef and runs the back of the house and all of it’s various components. He is calm, kind, and incredibly talented. He comes to us with decades of experience after graduating from Johnson and Whales, most recently as executive chef at Bleu Northeast Kitchen in Burlington. He keeps the kitchen immaculate, his menus are fresh and unique, and his food is outstanding. His love for his craft is evident in his work and enjoyable attitude, which can be so rare with chefs of his caliber.

Chef Bo
Chef Bo is our Sous Chef and has been cooking for decades. Most recently coming from Healthy Living, and was Sous Chef at Bistro de Margot in Burlington for many years prior. He is professional, talented, and always has a good attitude. He has many culinary talents that he brings to us and we look forward to tasting more of his creations. He lives in Underhill with his wife Kate and their two daughters Eva and Sophie.

Moriah
Working in restaurants since she was a teenager, Moriah brings an innate gift for caring about good service. She lives in Waterville with her cat, Girl, and takes care of over 50 house plants. Talk about service……

David
David is our front of house manager and does a fantastic job leading our service team. He is a Master Sommelier, owns his own wine company, Stella 14, and has opened and ran many various restaurants. Originally from West Newbury, Vermont, he currently lives in Cambridge with his wife, Lauren and two dogs, Leaf and Pesto. David emulates hospitality in a manner that is simply remarkable. His love for great service and people radiates from him while he works.

Delima
Delima is our head baker and is a shining, young rock star! Starting to bake as a very young person, and growing their skills at Hanley’s in Jeffersonville for over 2 years, their skills are strong and their passion is pouring out of them. We are so fortunate to have this sweet person in our kitchen.

Jamie
Jamie has been working up at Smuggs for many years and has a huge amount of service under her belt. She lives locally with her family and enjoys gardening.

Tommy
Tommy works at both locations and is the “life of the party” everywhere he goes. His positive energy is contagious and his great attitude is a force that helps us through our long days. He is a butcher, a baker and a better day maker!!!!!!!

Vicky
Vicky and her daughter Mikayla both work at Poorhouse pies. They are a power house team and live just up the road. Vicky is our house maternal figure and takes care of our cafe like her own home. She is one of the kindest souls you could meet and has that old school work ethic that is so estimable. She is here at 5am most days getting us ready to rumble for the day.

Mason
Mason has been serving this community coffee for the last four years and is fantastic at her barista skills! She is a huge asset to our front of house team and brings with her true kindness of spirit. She loves to garden and take long walks in the rain. We are so blessed that she had joined us to continue to serve coffee to this community.

Gary
Gary has been cooking for over 20 years and is running our lunch line and sometimes breakfast too. Born and raised in Essex, he is now living in Cambridge and is the proud father of two sons, Parker and Kelan.

Michael
After four years of looking, we have finally found a new donut master! Michael has been in the food industry his whole working career and is doing a fantastic job working with Delima to produce beautiful donuts!!!!! He is so much fun and always comes in full of great positive energy, even at 4am, which is impressive.

Natalie
Born in North Dakota and transplanted to Vermont in 2013, Natalie adds a very sweet touch to our barista team. She is in nursing school at Castleton and hopes to work in labor and delivery. She also loves to run and hike in her spare time.

Suzanne
Suzanne lives in Underhill with her large animal family, where she owns and passionately runs Poorhouse Pies. With over 38 years of experience in the restaurant and catering industry, she took over this little, local craft and turned it into her passion project. With the help of talented ,local bakers and chefs, she built a new bakery, expanded the concept, added a catering company and in 2026 opened Poorhouse Pies Cafe in Cambridge. Both the pie shop and cafe reflects her vision, and are filled with love, laughter, and the most delicious food!!!

Jon
Jon, aka husband, is the man behind the incredible transformation of our new cafe in Cambridge. His skills are endless and he has a lifetime of experience in bakeries. His family started and still owns Quality Bake Shop in Essex, where as a boy, Jon cut his teeth frying donuts. He can build and fix anything it seems and we would be lost without him.

Cortney
Cortney is such a bright light for us and comes in a 5am brimming with positive energy. She lives in Belvidere with her husband Elliot, 3 cats, 1 dog and a turtle named Mortimer. She works every summer for VT Parks and and loves to be outdoors.

Shay is our web and digital design guru. She has years of experience in the digital marketing world and has helped us redesign our website, created our beautiful catering menu, and helps us with event flyers.
